Cougars' defensive lineman Travis Long rolled into the right knee of Nick Foles early in the second quarter and Foles fell clutching it.
He would not return to the game and the extent of the injury is currently unknown, although it is expected he will at least miss the next game.
With the loss of Foles, Arizona decided to go to the ground and ran 47 times for 142 yards.
Antolin put the UA on the board with a nine-yard touchdown run and added a one-yard touchdown with Scott in the game to make it 14-0.
To start the second half, punter Reid Forrest fumbled the snap and Khyri Knowles dove on the ball at the 7.
On the next play, Nic Grigsby ran in for a 21-0 lead.
Arizona will now return home to face Washington on Saturday night.
