"I really like their campus when I was there; it was really nice. I'm very interested in them," he said.
The 5-foot-10, 185-pounder also has his eye on Houston, Texas A&M Kingsville, and UTPA.
With his work schedule, Quintanilla has yet to take in any college camps, though he did compete at both the regional Elite 11 quarterback camp and the Nike Football Training camp, held earlier this year.
The quarterback threw just shy of 4,000 yards for 56 touchdowns with only two interceptions last season and also set the state record for passing touchdowns in a single game with ten.
Quintanilla is continuing to work out and put in time in the weight room as he prepares for his senior season and contemplates his options for the future.
"It's not just about sports; wherever I end up going, I also want to get a good degree, like maybe something for coaching," he said.
