Baking with Honey

When substituting honey for sugar in baked goods, follow these guidelines:

•Use only 1/3 to 1/2 the amount of honey because of its sweetness.

•Reduce the amount of liquid by 1/5 to 1/4.

•Add 1/2 teaspoon baking soda for each cup of honey used.

•Reduce the oven temperature by 25° to prevent overbrowning.
