Attack of the Massive Zucchinis

The ideal length for a mature zucchini is 6 to 8 inches. They're less desirable when they're overgrown because they become fibrous and seedy. However, every summer yields a few zucchini monsters; here's what you can do with them.

  • Stuff with a filling of spiced ground meat and Rice or sautéed vegetables, bread crumbs and cheese.
  • Scrape out the seeds and shred the flesh. Then make zucchini bread. Make that bread super decadent with this recipe for Chocolate Zucchini Bread.
  • Freeze the shredded zucchini for later use. After shredding, steam the zucchini in small batches 1 to 2 minutes or until translucent. Dip in a cold water bath, drain and freeze in plastic containers. After thawing and before using, squeeze out excess moisture.
