Garlic-Chive Accordion Potatoes

These textured baked potatoes are easy to prepare: Simply slice, season and bake. The potatoes do the rest as they spread into a fan shape.

Cut unpeeled small Yukon gold potatoes crosswise into thin (1/4 inch) slices, cutting down almost to the bottom (do not cut all the way through). Place on greased rimmed baking sheet. Generously brush with melted butter mixed with minced garlic, making sure butter gets between the slices. Sprinkle with salt and pepper. Bake at 425ºF. 25 to 35 minutes or until tender. Sprinkle with sliced fresh chives.
