Smashed New Potatoes with Parmesan

A cross between roasted, mashed and baked potatoes, these flattened spuds will definitely become a family favorite.

Toss unpeeled small new potatoes with olive oil, salt and pepper; arrange in a single layer on a rimmed baking sheet. Bake at 425ºF. 30 minutes or until tender. Gently press with potato masher until slightly crushed and flattened. Generously brush with melted butter; sprinkle with shredded Parmesan cheese. Bake an additional 10 to 15 minutes or until lightly browned.
