CRANBERRY, FETA AND ALMOND SALAD
4 (11/4-cup) servings
3 tablespoons extra-virgin olive oil
1 tablespoon raspberry vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons sliced fresh chives
4 cups mixed salad greens
1/3 cup crumbled feta cheese
1/3 cup dried cranberries
1/4 cup sliced almonds, toasted*
- Whisk oil, vinegar, salt and pepper in small bowl. Stir in chives.
- Toss greens in large bowl with enough dressing to lightly coat. Top with cheese, cranberries and almonds.
PER SERVING: 195 calories, 16 g total fat (3.5 g saturated fat), 4 g protein, 12 g carbohydrate, 10 mg cholesterol, 225 mg sodium, 2.5 g fiber
TIP *To toast almonds, place on baking sheet; bake at 375°F. for 4 to 6 minutes or until light golden brown. Cool.
