Cranberry, Feta and Almond Salad

Bring color to your holiday table with this fresh green salad accented with bits of red (cranberries) and white (feta cheese). It’s tossed with a tangy dressing that conveniently can be made ahead of time.

4 (11/4-cup) servings

3 tablespoons extra-virgin olive oil
1 tablespoon raspberry vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons sliced fresh chives
4 cups mixed salad greens
1/3 cup crumbled feta cheese
1/3 cup dried cranberries
1/4 cup sliced almonds, toasted*

  1. Whisk oil, vinegar, salt and pepper in small bowl. Stir in chives.
  2. Toss greens in large bowl with enough dressing to lightly coat. Top with cheese, cranberries and almonds.

PER SERVING: 195 calories, 16 g total fat (3.5 g saturated fat), 4 g protein, 12 g carbohydrate, 10 mg cholesterol, 225 mg sodium, 2.5 g fiber

TIP *To toast almonds, place on baking sheet; bake at 375°F. for 4 to 6 minutes or until light golden brown. Cool.
