FRESH MOZZARELLA-TOMATO PIZZA WITH ANCHOVIES
8 oz. purchased pizza dough
1 tablespoon olive oil
1 large clove garlic, minced
1/2 cup crushed tomatoes
2 minced anchovies
2 tablespoons + 1/4 cup coarsely chopped fresh basil
1/4 cup grated Parmesan cheese
1/2 cup small fresh mozzarella balls, halved (such as 1-inch ciliegine)
Crushed red pepper
3. Mix olive oil with garlic. Brush on dough.
4. Mix tomatoes with anchovies. Top dough with tomato mixture, 2 tablespoons basil, Parmesan cheese and mozzarella.
5. Slide pizza with parchment paper onto pizza stone. Bake 8 to 12 minutes or until bottom of crust is golden brown.
6. Using tongs, slide pizza onto baking sheet; sprinkle with 1/4 cup small fresh basil leaves and crushed red pepper, if desired.
