Spicy Baked Catfish with Garlic Butter

Serve this catfish with any Southern-style side, such as coleslaw, braised greens or fried okra. The fillets also make great po-boy sandwiches when tucked into a split baguette and garnished with lettuce, tomato and pickles.

Spicy Baked Catfish with Garlic Butter

1 teaspoon lemon-pepper seasoning
1 teaspoon paprika
1/2 teaspoon garlic powder
Dash to 1/8 teaspoon cayenne pepper
2 (6-oz.) catfish fillets
2 tablespoons unsalted butter, softened, divided
1 small garlic clove, minced
2 lemon wedges

1. Heat oven to 450ºF. Spray small rimmed baking sheet with cooking spray. Combine lemon-pepper seasoning, paprika, garlic powder and cayenne pepper in small bowl; sprinkle over catfish. Place on baking sheet; dot with 1 tablespoon of the butter.

2. Bake 14 to 16 minutes or until fish just begins to flake.

3. Meanwhile, combine remaining 1 tablespoon butter and garlic in small bowl. Top fish with garlic butter; serve with lemon wedges.
