Sweet Potato-Apple Sausage Pizza with Sage
8 oz. purchased pizza dough
1 tablespoon olive oil
1 large clove garlic, minced
1/3 cup ricotta cheese
1 roasted, sliced sweet potato*
1/2 cup thinly sliced red onion
1/4 cup shredded Parmesan cheese
1 sliced (3-oz.) link chicken-apple sausage (cook until no longer pink)
3 oz. crumbled goat cheese
2 tablespoons coarsely chopped fresh sage
1. Arrange oven rack in bottom position. Place pizza stone or heavy baking sheet on bottom oven rack. Heat oven to 500ºF. for at least 30 minutes. 2. Roll out dough to 12-inch round. Place on parchment paper.
3. Mix olive oil with garlic. Brush on dough.
4.Top with ricotta cheese, sweet potato, red onion, Parmesan cheese, sausage, goat cheese and sage.
5. Slide pizza with parchment paper onto pizza stone. Bake 8 to 12 minutes or until bottom of crust is golden brown.
6. Using tongs, slide pizza onto baking sheet.
TIP *To roast sweet potato, toss 1 (8 oz.) thinly sliced peeled sweet potato (use orange sweet potatoes, often labeled as yams) with 1 tablespoon olive oil; arrange on small rimmed baking sheet. Bake at 425 degrees F. 15 to 20 minutes or until tender and lightly browned. Cool slightly.
