1 large onion, coarsely chopped
3 lb. boneless country pork ribs
2 teaspoons dried oregano, preferably Greek
1 1/2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon pepper
1/4 teaspoon ground ginger
1/4 teaspoon ground cayenne, or to taste
1/4 teaspoon ground allspice
1/2 cup chili sauce, such as Heinz
1. Place onion in bottom of 3- to 4-quart slow cooker. Toss ribs in large bowl with all remaining ingredients except chili sauce. Place over onion. Pour chili sauce over ribs.
2. Cover and cook on low for 4 to 5 hours, or on high for 2 to 2 1/2 hours, or until ribs are fork-tender. Remove ribs to large bowl. If a thicker sauce is desired, pour sauce into large wide saucepan. Boil over high heat 3 to 8 minutes or until sauce is slightly thickened. Pour over ribs.
