Crispy Health Bars

Pepitas (pumpkin seeds), sunflower seeds, raisins and soy nuts boost the nutrition of these tasty bars. No baking required!

2 cups crisp rice cereal
2 cups old-fashioned rolled oats
1/2 cup raisins
1/2 cup shelled roasted salted sunflower seeds
1/2 cup roasted salted pepitas (green pumpkin seeds)
1/2 cup roasted salted soy nuts
1/2 cup packed brown sugar
1/2 cup light corn syrup
1/2 cup peanut butter
1 teaspoon vanilla


1. Spray 13x9-inch pan with nonstick cooking spray.* In large bowl, stir together cereal, oats, raisins, sunflower seeds, pepitas and soy nuts.

2. In medium saucepan, combine brown sugar, corn syrup and peanut butter. Cook over medium heat 3 to 5 minutes or until bubbly. Remove from heat; stir in vanilla. Pour over cereal mixture; stir to combine. Press into pan; cool completely.


TIP *To make removal of bars easier, line pan with foil before spraying it.
