Spicy Herbed Olives

Skip those costly olive bars at the grocery story. Make your own spiced olives at home by infusing green and Kalamata olives with herbs and spices.

8 oz. jumbo Kalamata olives
8 oz. cracked green olives
8 oz. niçoise olives
1/2 cup diced red bell pepper
4 Italian parsley sprigs
2 tablespoons minced fresh Italian parsley
2 kumquats, thinly sliced
2 teaspoons grated lemon peel
2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
1/8 teaspoon crushed red pepper


In large bowl, stir together all ingredients. Cover and refrigerate at least 1 day. When ready to serve, discard parsley sprigs. Serve at room temperature.
