1 tablespoon packed brown sugar
1 teaspoon grated lemon peel
1 teaspoon grated lime peel
1/2 teaspoon paprika
4 (6- to 8-oz.) tuna steaks (3/4 inch thick)
1 teaspoon freshly ground pepper
1/4 teaspoon salt
1 tablespoon canola oil
1. In small bowl, stir together brown sugar, lemon peel, lime peel and paprika. Sprinkle tuna with pepper and salt; sprinkle citrus mixture over tuna, pressing lightly into flesh.
2. Heat heavy large skillet over medium-high heat until hot. Add oil; heat until hot. Add tuna; cook 4 to 5 minutes for medium-rare or until of desired doneness, turning once.
