Quick 'n Healthy: Flank Steak with Curry Rub

With its short cooking time and almost effortless preparation (no chopping required!), this dish is a weeknight cook’s dream. The unique Asian-accented peanut butter rub imbues the steak with fabulous, full-bodied flavor. Also try it on chicken or pork.

2 tablespoons creamy peanut butter
2 tablespoons hoisin sauce*
2 teaspoons curry powder
2 teaspoons dark sesame oil
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 (1 1/4-lb.) flank or sirloin steak (3/4 to 1 inch thick)


1. Heat broiler. Spray broiler pan with cooking spray. Combine all ingredients except steak in small bowl; spread over both sides of steak. Place steak on broiler pan.

2. Broil steak (or grill over medium heat or coals) 8 to 10 minutes for medium-rare to medium, turning once. Let stand 5 minutes; thinly slice.


TIP *Hoisin sauce is a thick, sweet, reddish-brown sauce made with soybeans, chiles, garlic, vinegar and spices. You can find it in Asian markets or in the Asian section of your grocery store.
