Focaccia Wheel Roast Beef Sandwich

Turn focaccia, the round, flattened pizza-style bread, into a sandwich by slicing it in half and filling it with roast beef, blue cheese, vegetables and a basil-flavored mayonnaise.

1/3 cup mayonnaise
3 to 4 tablespoons crumbled mild blue cheese
2 tablespoons chopped fresh basil
1/8 teaspoon pepper
1 (8-inch) loaf focaccia, halved horizontally
2 large tomatoes, sliced
1/4 teaspoon coarse salt
1/4 sweet onion, sliced
1/2 cup spinach
1/2 cup arugula or additional spinach
8 oz. thinly sliced deli roast beef
1/4 cup sliced Kalamata olives

1 Combine mayonnaise, cheese, basil and pepper in small bowl; spread on cut sides of bread.

2 Arrange tomatoes over bottom half of bread; sprinkle with salt. Top with all remaining ingredients. Cover with top half of bread; cut into wedges.
