Sunday afternoon, I made 4 pints of corn cob jelly. Has an interesting flavor. I'll have to go back and try it again and see if I can pin it down. Kind of like honey, but kind of like corn bread or pop corn. But that was just licking the spoon after putting it all in jars. I've been wanting to try this for many years.
I canned 4 half pints of blackberry vinegar. I believe I might have let it sit and age too long. Not sure I'll ever try that one again. No leftovers to sample right away.
I canned 7 half pints of pickled red onions. I've been wanting to try making some for a long time. They had these beauties at the produce stand for 50 cents per pound in the scratch and dent section, so I snatched all they had. It's basically just garlic infused vinegar and red onions. Supposed to use red wine vinegar, but I didn't have enough, so I used cider vinegar for half. They're not sweet at all. i hope the vinegar mellows after a while. I used those short wide mouth half pint jars for these. Really neat looking.
Last Monday, I canned a batch each of Ellie Topp's Fiesta Corn Relish (cumin is the prevalent spice) and also Ball's Corn Relish (with cabbage). Those look good. No extras, so I'll wait to try them.
Two weeks ago, I did Yvonne Tremblay's plum peach chutney (all peaches, no plums) and Linda Ziedrich's zucchini relish. Found yesterday one of the lids on the zuke relish didn't seal, so it was tossed. Never had one break like that. Disappointing. Probably just old lids.
Oh, I froze about 100 ears of Silver Queen. Let's see, that's one ear every 3 days and I'll be ready for next year's harvest again. Ugh! :-)
I think I'm through for a while, but I should never say that because something else will come up that I want to try. Maybe Habanero Gold... :-)
