Grilled Vegetable Kabobs
This is something that can be easily made for any veggie lover! Simply slice and dice a handful of tomatoes, cucumbers, onions and potatoes to be placed on the skewers. Brush on some garlic oil or olive oil and sprinkle on a little salt for additional flavor. Roast them up with the other vegetables on the grill until lightly crisp, and you’re ready to go!
Black Bean Burgers
To make a hearty black bean burger, pour a 15-ounce can of black beans into a bowl, then sprinkle in herbs such as salt, pepper and cilantro. Then, add one egg and one-half cup of breadcrumbs. Use a potato masher to combine all of the ingredients, then form patties out of the mixture. Toss them on the grill and cook until crispy on both sides.
Who says nachos have to have meat? Nachos are something that can be made before the game, and you can include plenty of vegetarian-friendly additions to the dish. Think jalapenos, salsa, black beans and pinto beans. Some vegetarians might not mind having a little tofu in there!
